Why extraction systems catch fire

How we do it

Survey and schedule
We look at the system and agree a time that does not affect your operation, which for most restaurants means working overnight or between services.

Remove and clean the filters
Filters are removed and cleaned separately, since they hold a large share of the grease and are easy to under-clean in place.

Degrease the hood and ducts
The canopy and connecting ductwork are power washed with a Municipality approved heavy duty degreaser to flush out hardened grease.

The exhaust fan and ecology unit are cleaned, as a clean canopy feeding a clogged fan does not solve the airflow or fire problem.

How often does a commercial kitchen duct need cleaning?
It depends on cooking hours. A kitchen running 24/7 may need cleaning monthly. At around 16 hours a day, every three months. At around 6 hours a day, every six months. Dubai Municipality has made it mandatory to have duct cleaning carried out at six-month intervals by an approved service provider.

What chemicals do you use on the hood?
A Municipality approved heavy duty degreaser, which is what actually removes hardened, sticky grease. Retail degreasers are not formulated for the volume of build-up in a commercial extraction system.
